ZUCCHINI SLICE
One of my philosophies is to add in extra nutritional value whenever I can. This zucchini slice is a perfect example. Packed with vegetables, zucchini slice makes a great substitute for a sandwich in the school lunch box. And the kids are eating up lots of yummy veggies without even thinking about it.
INGREDIENTS
4 rashers nitrate free bacon (omit for vegetarian)
2 medium zucchinis
2 carrots
1 brown onion
5 eggs
1 tbsp vegetable stock paste or 1 tsp of vegetable stock powder.
Or if you don’t have home made stock paste on hand a few good grinds of salt and pepper will do
1 cup plain flour (I use spelt flour but you can use plain flour)
60g cheese. Use cheddar and/or parmesan cheese
Salt & Pepper to taste
METHOD
Prepare a baking dish by lining with baking paper or grease with a little butter or ghee
Either grate the zucchini and carrots, dice onion and add to a large mixing bowl.
Or add zucchini, carrots and onion to Thermomix bowl and dice 3 seconds speed 5
(you may need to do this in two portions).
Add all ingredients to large a mixing bowl.
Either grate the cheese or add diced cheese to Thermomix bowl and dice 5 seconds speed 7.
Add to bowl with zucchini mix.
Dice bacon into 1-2cm pieces, add to zucchini mix.
Add eggs to a seperate bowl and mix to combine.
Add the vegetable stock paste and plain flour to the egg mix and stir to combine.
Add egg mix to the zucchini mix and give a really good stir to ensure all
ingredients combine together.
Season with salt & pepper.
Poor mixture into baking dish and bake 40-50 minutes until cooked through.
Allow to set in baking dish for 15 minutes before slicing.
Either serve for dinner with your favourite salad or add to lunch boxes for a yummy nutritional lunch!
